Valentines’ Day Recipe

By Olivia McCafferty-Cable

Sometimes the best part about Valentine’s Day is all of the delicious treats! Boxes of chocolate, candy hearts, and yummy cookies make this holiday super sweet. To prepare for Valentine’s Day, I made some chocolate cupcakes. Here’s how they turned out!

If you’re interested in making this dessert, this is the recipe:

For the cake-

  • 2 cups sugar
  • 1-3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1-1/2 teaspoons baking powder
  • 1-1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup butter
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • Chocolate frosting

Line muffin cups (2-1/2 inches in diameter) with paper bake cups. Heat oven to 350°F. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed for 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans. Fill cups 2/3 full with batter. Bake 22 to 25 minutes. Cool completely, then frost. This makes about 20 cupcakes.

For the frosting-

  • 1/2 cup (1 stick) butter or margarine
  • 2/3 cup unsweetened cocoa powder
  • 3 cups powdered sugar
  • 1/3 cup milk
  • 1 teaspoon vanilla extract

Melt butter, stir in cocoa, alternately add powdered sugar and milk, and beat to spread consistency. Add small amount additional milk, if needed. Stir in vanilla. This makes about 2 cups frosting. (You can decorate the cupcakes however you want to, but for mine, I sprinkled on some powdered sugar in the shape of a heart.)
This is a recipe my grandma used to make, so I thought I’d try it out. I’ve never been much of a baker, but I enjoyed the process, and of course, the final result. Enjoy!
